Ingredients
- 2 cups finely-diced celery
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons minced fresh cilantro
- 2 teaspoons Sherry wine vinegar
Preparation
Step 1
Combine all ingredients in medium bowl. Season relish with salt and pepper. Let stand at least 30 minutes. (Can be made 6 hours ahead. Cover and chill.)
This recipe yields about 2 cups.
