Ingredients

  • 2 2/3 c flour
  • 1 Tbsp baking powder
  • 2 Tbsp sugar
  • 5 Tbsp butter or margarine
  • 1 egg
  • 1/4 c liquid from the olives
  • 1 c milk
  • 1/4 c gin or vodka
  • 1/4 c Parmesan cheese
  • 1/2 c chopped walnuts
  • 1 c pimento-stuffed olives

Preparation

Step 1

Mix flour,baking powder and sugar in a large bowl
Cut in the butter with a pastry blender until mixture resembles coarse crumbs
Beat egg lightly with olive juice,milk,gin and cheese
Pour into flour mixture
Gently stir for 30 seconds
Stir in nuts and olives
Grease and line an 8 x 4 loaf pan with parchment paper
Bake at 350 F for 45-55 min or until a toothpick inserted in the center comes out dry
Cool
Serve in small buttered slices
