Ingredients
- 6 large tomatoes,skinned,seeded and finely chopped
- 2 cucumbers,peeled,seeded and finely chopped
- 3/4 c celery finely chopped
- 3/4 c red or green sweet pepper,finely hopped
- 3/4 c onion (Spanish or green) finely chopped
- 4 c tomato juice
- 2-3 Tbsp lemon juice
- 1 clove garlic,crushed
- Salt,pepper and Tobasco sauce
- Parsley and lemon slices to garnish the top

Preparation
Step 1
In a large bowl put garlic,tomatoes,cucumbers,peppers,celery and onions
Pour over the tomato juice and lemon juice
Season to taste with salt,pepper and Tobasco sauce
Allow to sit a day or two to develop the flavours
Could blend with an immersion blender to make the texture smooth
Serve chilled and sprinkled with some parsley
