Ingredients
- TOPPING:
- 2 med sweet potatoes, cooked and peeled
- 1/2 cup low fat milk
- 1/3 cup sugar
- 2 eggs
- 2 Tbs butter
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- CRUNCHY PRALINE TOPPING
- 2 Tbs butter
- 3/4 cup cornflake cereal
- 1/2 cup chopped walnuts or pecans
- 1/4 cup brown sugar
- BEAT potatoes on speed 2
- of Kitchenaid Stand mixer
- 30 seconds
- ADD the other ing.
- Turn to Speed 4.
- Beat 1 minute
- Spread mix on GREESED pie plate.
- Bake 400* 20 minutes
- Clean mixer.
- Place ing in mixer.
- Turn to STIR speed 15 sec
- Spread on Hot Puff and bake for 10 min longer.
