Ingredients

  • 24 cherry tomatoes
  • can of olives--kalamata preferable
  • 1 lb fresh mazzarella
  • 1/2 cup fresh basil
  • 1/4 cup olive oil
  • 2 tbsp of balsamic vinigar
  • salt and course black pepper
  • optinal:1/2 cup finely sweet chopped onions or green onions

Preparation

Step 1

1. Quarter tomatoes-optional
2. Dice mozerella intosmall bite size pieces--roll if possible
3. chop or tear basil
4. Inmixing bowl combine first four ingredients.
5. toss with olive oil and balsamic vinegar.
6. season to taste with salt and pepper
serve in mini martinin glasses along a long tray
