Sauerkraut Salad

Ingredients

  • 1 qt. sauerkraut, drained (I use the bag of sauerkraut)
  • 1 cup sliced celery
  • 1/2 cup chopped peppers or pimentos ( I use pimentos)
  • 1/2 cup chopped onion
  • 1 cup sugar
  • 1/4 cup white vinegar
  • 1/4 cup vegetable oil
  • 1/4 tsp. salt
  • Make at least one day ahead

Preparation

Step 1

Combine sauerkraut, celery, peppers ( or pimentos) and onion.
Mix well. Combine sugar, white vinegar, oil and salt.
Pour over sauerkraut mixture. Toss well.
Refrigerate at least 24 hours ahead of serving time.
Keeps forever ( unless it gets eaten, like mine does)
