Three Bean Salad

Ingredients

  • 1 cup ½ inch pieces green beans
  • 1 cup ½ inch pieces yellow wax beans
  • 1 16 oz. can kidney beans, rinsed and drained
  • ½ cup chopped green bell pepper
  • ½ cup chopped onion
  • ½ cup each oil and red wine vinegar
  • ¾ cup sugar
  • ½ tsp. dried tarragon
  • Salt and pepper

Preparation

Step 1

Boil green beans and wax beans in salted water to cover until tender but slightly crunchy, about 2 minutes:

Drain and place in a bowl and stir in the kidney beans, pepper, and onion.

In a small bowl whisk together oil, vinegar, sugar, tarragon, salt, and pepper.

Combine together to coat, toss well, cover and chill 6 hours or overnight.
