Quinoa and Cranberry Salad

Ingredients
- 1 C dry quinoa
- 1 1/2 C chicken stock
- 1 T chopped fresh parsley
- 1 T chopped fresh chives
- 1/3 C chopped pecans
- 2 T lemon juice
- 2 T olive oil
- Black pepper to taste
Details
Preparation
Step 1
Rinse quinoa in fine sieve to remove bitterness.
Place quinoa in medium sauce pan with chicken stock.
Cover the pot, bring to full boil. Reduce to low and simmer for 15 minutes.
Remove from heat and set aside to cool.
Combine all other ingredients in a bowl. Pour on top of quinoa and mix together.
Chill.
