Lactose Free Carrot Soup

Ingredients
- 6 c chicken stock
- 1 onion,finely chopped
- 6 carrots,finely chopped
- 2-3 potatoes,finely chopped
- 1 tsp minced garlic
- spices to taste (I use thyme,basil,oregano,pepper)
- I also add any leftover squash if I have it

Preparation
Step 1
Put all ingredients into a large soup pot
Simmer until all vegetables are tender-30 min or longer
Puree soup until smooth and no chunks are left
I use a small hand blender right in the pot but you can also put everything in a large blender or food processor
Sprinkle with parsley to serve
Freezes well
