Ingredients
- 4 small zucchini, sliced (4 small = about 4 cups)
- 1/2 cup sliced red onion
- 1/4 cup shredded Parmesan cheese
- 1 tablespoon Canola Oil
- 1 tablespoon lemon juice
- 1/4 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
