Ingredients
- 1 lb bow-tie pasta
- 1 gr bell pepper, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, choppee
- 3 oz oil-packed sun-dried tomatoes, chopped
- 1 med red onion, chopped
- 3 oz pine nuts, toasted
- 8 oz prepared red-wine salad dressing
- 2 tsp sugar
Preparation
Step 1
Cook pasta according to directions. Drain and rinse with cold water.
Combine pasta , vegetables and pine nuts in large bowl. Whisk together salad dressing and sugar in small bowl. Pour over pasta mixture and toss to coat. Chill for several hours before serving.
Note: To toast pine nuts, heat nonstick skillet to medium high, add nuts, cook 30 seconds, shaking or stirring constantly, careful not to burn.
