Spaghetti Squash Saute

Ingredients

  • 1 large spaghetti squash
  • 2 T raw or organic butter
  • 1 medium shallot, minced
  • 2 T red pepper, finely chopped
  • 2 T green pepper, finely chopped
  • 1/2 tsp. Italian seasoning
  • fresh ground pepper to taste

Preparation

Step 1

Cut squash in half and boil in a large pot filled with water until tender. Remove from pot and allow to cool slightly. Scoop out flesh with a fork.

In a large skillet, melt butter over medium heat and saute shallot for about a minute.

Add squash, peppers and seasoning and stir to mix. Cook until dish is heated through, about 2-3 minutes.
