Mulligatawny Soup

Ingredients

  • 1/2 C onion, finely chopped
  • 3 Tbsp butter
  • 2 1/2 Tbsp flour
  • 2 tsp curry powder
  • 1 qt chicken broth, heated
  • 1 pint half & half
  • salt and white pepper to taste
  • 1 C cooked chicken, cut in thin slices
  • 1 raw tart apple peeled/cored/finely chopped
  • 1 Tbsp parsley chopped

Preparation

Step 1

In soup pot, saute onion in butter. Stir in flour and curry and cook 2 minutes. Gradually stir in broth. Stir constantly until thicken and is smooth. Stir in cream. Season to taste with salt and pepper.

Add chicken and apple 10 minutes before serving. Adjust seasoning if necessary. Garnish with parsley.
