Pressure Cooker Risotto

Ingredients

  • 4 strips cooked bacon
  • 1/2 c. onion, diced
  • 1 T garlic, minced
  • 1/2 tsp. red pepper flakes
  • 1 sprig fresh sage
  • 1-1/2 c. Arborio rice
  • 1 cinnamon stick
  • 1/2 c. apple cider
  • 3-1/2 c. chicken stock
  • 2 c. butternut squash, diced
  • 1/2 c. pecorino, grated
  • s&p
  • balsamic
  • shaved pecorino
  • sage leaves

Preparation

Step 1

In pressure cooker in bacon fat, cook onion, garlic sage leaf and pepper flakes. Stir in rice, about 5 min. Stir in cinnamon stick, cider, broth and squash. Cook at high pressure, 6 min. Let sit 3-5 min. Stir in cheese, s&p. Add the rest as garnish.
