Ingredients
- 4 strips cooked bacon
- 1/2 c. onion, diced
- 1 T garlic, minced
- 1/2 tsp. red pepper flakes
- 1 sprig fresh sage
- 1-1/2 c. Arborio rice
- 1 cinnamon stick
- 1/2 c. apple cider
- 3-1/2 c. chicken stock
- 2 c. butternut squash, diced
- 1/2 c. pecorino, grated
- s&p
- balsamic
- shaved pecorino
- sage leaves
Preparation
Step 1
In pressure cooker in bacon fat, cook onion, garlic sage leaf and pepper flakes. Stir in rice, about 5 min. Stir in cinnamon stick, cider, broth and squash. Cook at high pressure, 6 min. Let sit 3-5 min. Stir in cheese, s&p. Add the rest as garnish.
