Ingredients
- 1 cup chopped onion
- 1 cup chopped celery
- 3 tbsp butter
- 4 cups half-and-half
- 1-1/2 tsp salt
- 1-1/2 tsp pepper
- 3 tbsp flour
- 3 medium potatoes, baked, peeled and cut into 3/4-in cubes
- 1 cup shredded Cheddar cheese
- 1/2 cup fresh cooked bacon bits
- 1/2 cup sour cream
- chopped fresh chives
Preparation
Step 1
Saute onion and celery in 1 tbsp butter until tender. Combine onion mixture, half-and-half, salt, and pepper in large saucepan; mix well. Heat to boiling, stirring occasionally.
Heat 2 tbsp butter in saucepan until melted. Whisk in flour. Cook for 3 minutes or until roux consistency. Whisk into half-and-half mixture. Cook until thickened, stirring constantly. Add potatoes; mix well.Cook just until potatoes are heated through, stirring frequently. If desired, mash some of the potatoes, but leave most in small chunks.
To serve: ladle into bowls. Top each serving with Cheddar cheese, bacon bits, sour cream and chives.
