Italian Pizzelles (lemon) - Italian Wafer Cookies

These are wonderfully crisp and soft at the same time. There are many different flavors that you can add to this recipe.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 3 eggs, beaten
  • 3/4 cup sugar
  • 3/4 cup butter, melted
  • 2 tsp lemon extract
  • 1 tbsp grated lemon zest
  • powdered sugar for dusting

Preparation

Step 1

In a small bowl, sift together the flour and baking powder.

In a large bowl, beat together the eggs and sugar, add melted butter, lemon extract and lemon zest, beat until smooth. Add the flour mixture and beat until smooth

Preheat your pizzelle baker. Lightly spray the pizzelle grids with non-stick spray or lightly brush with vegetable oil.

I cook these on the 3.5 heat setting until there is no more steam.
