Meringues gluten free

Ingredients

  • 4 egg whites at room temperature
  • 1 cup sugar
  • 0.5 teaspoon of cream of tartar (mix with sugar)

Preparation

Step 1

Beat the egg whites until stiff.
Add sugar in small amounts while continuing to beat.

Preheat oven to 225F
Make coils with a pastry bag and place them on a baking tray covered with parchment paper.

Bake about 1 hour.

After 30 minutes, white and fluffy meringues are obtained.

After an hour we get pink meringues, crispy and melting, with a soft inside.
Gently peel the meringues right after taking them out of the oven and let cool.

Some tips:

- Eggs out of the fridge fifteen minutes before use
- Especially not mix yellow with white
- Add a pinch of salt before beating
- Use a taller than wide container
- Use an electric mixer! (much faster and less tiring)
