Roasted Pumpkin Wedges

A great way to use up your Halloween pumpkin. It is just like eating pumpkin pie without the crust.

Ingredients

  • 1/4 c sugar
  • 1/2 teas ground cinnamon
  • 1/4 teas ground allspice
  • 2 T butter, cut into small pieces, plus more for dish
  • 4-five inch wedges of pumpkin, skin on
  • 1/2 c heavy cream, plus more for whipping

Preparation

Step 1

Heat oven to 350. In a small bowl mix sugar, cinnamon, and allspice. Set aside.
Butter a 21/2 quart shallow baking dish, and place wedges inside. Pour cream over wedges, coating each piece. Place butter pieces on wedges and in baking dish. Sprinkle sugar mixture over wedges and place in oven. Bake until golden brown and fork tender about 1 hour. Remove from oven; set aside for 15 minutes. Serve warm with whipped whipping cream or ice cream.
