Chicken (a la Tom Bird)

Ingredients

  • 1 1/2 lb chicken
  • Salt & Pepper
  • Butter
  • Mushrooms
  • Onion (optional)

Preparation

Step 1

Split chicken with bone cut out.
Salt, pepper & butter the chicken
Add mushrooms, maybe onions on chicken
Place in aluminum foil
Pour Sauterne (or any white wine) on chicken
Wrap and bake at 200 degrees for about four hours. Serve with wine gravy.
Goes well with green beans, corn, rolls, avocado and pink grapefruit salad with French dressing.

Mom's (Helen Foreman) adaptation of recipe

Boned chicken breasts (one per person)
1 small can of mushroom slices to 4 breasts
1/4 cup wine
Salt, pepper, margarine
4 hours at 200 degrees
