Baby Bok Choy Sauteed in Sesame, Garlic and Ginger

Bok Choy need not be limited to stir fries! Baby bok choy comes to life when cooked with sesame, garlic and ginger and pairs well with fish or chicken.

Ingredients

  • 6 fresh baby bok choy
  • 3 cloves garlic, minced
  • 1 Tbsp. fresh ginger, sliced thin
  • 1 Tbsp. olive oil
  • 2 tsp. sesame oil
  • 1/4 cup chicken or vegetable broth
  • 1 Tbsp. fresh lemon juice
  • 3 Tbsp. Hoisin sauce
  • 1/2 tomato, chopped into fine dice
  • 1 Tbsp. cilantro, chopped
  • salt and pepper to taste

Step 1

Wash bok choy well and slice in half length-wise. Make a 1-inch slit in the bottom (core) part of the bok choy.

In a large saute pan, bring the olive and sesame oils to a shimmer. Add the garlic and ginger and saute for 2 minutes. Add the bok choy cut-side down and saute for 2 minutes. Turn the bok choy and cook for 2 minutes more. Turn the bok choy back to cut-side down, add the chicken broth and cover. Let the bok choy steam like this for 2 minutes. Uncover and cook just long enough to reduce the liquid to about 2 Tbsp.

Generously season the bok choy with salt and pepper. Drizzle the fresh lemon juice over it, then the Hoisin sauce. Top with the chopped tomato and cilantro and serve immediately. Enjoy! For detailed instruction and step-by-step photos visit my blog at www.foodandfact.com
