Italian Pizzelles are a wonderful treat that are both soft and crispy. Enjoy them alone, or add them to ice cream or chocolate.

Ingredients

  • 1 1/2

    cups all-purpose flour

  • 1

    teaspoon baking powder

  • 3

    eggs, beaten

  • 3/4

    cup sugar

  • 3/4

    cup butter, melted

  • 2

    teaspoon lemon extract

  • 1

    tablespoon grated lemon zest

  • Powdered sugar for dusting

Directions

In a small bowl, sift together the flour and baking powder. In a large bowl, beat together the eggs and sugar, add melted butter, lemon extract and lemon zest, beat until smooth. Add the flour mixture and beat until smooth Preheat your pizzelle baker. Lightly spray the pizzelle grids with non-stick spray or lightly brush with vegetable oil. I cook these on the 3.5 heat setting until there is no more steam.
