Pan-Fried Hard Crabs
- 1 1/2 dozen of Crabs - Remove the backs and clean
- Batter - 3 C of Flour
- 1 Tsp of Baking Powder
- 1 Tbsp of Prepared Mustard
- 2 Eggs
- 1 C of Milk
- All Fat from Crabs (if female crabs, use only the "yellow"
- and NOT the Orange fat.
- Additional Crab Meat optional
Sift together - Flour, Baking Powder. Beat Eggs, add rest of ingredients to Egg mixture. Batter should be thick. Dip Crabs in batter, fry until golden brown on both sides.
****Crabs can be filled with crab meat, mayonnaise, and seasoned bread crumbs. Shape mixture, press into cavity of crab and then dip in the batter and fry****
Pan Fry, do NOT deep fry as its too greasy.
