Ingredients

  • 1 1/2 cup rhubarb
  • 1/2 cup sugar
  • Combine and set aside.
  • 2 cup flour
  • 1 1/2 cup sugar
  • 1/2 cup veg. oil
  • 1 tsp. vanilla
  • 1 egg
  • 1 cup buttermilk
  • 1 tsp. soda
  • 1 tsp. cinnamon

Preparation

Step 1

Mix above and add rhubarb mixture. Stir until well-blended. Pour into greased 9x13 pan.
Bake at 350 for 35 min. or until done.

Topping

6 T butter or margarine
1 cup coconut
2/3 cup brown sugar
1/4 cup milk
1 cup chopped pecans
