  • 1 CUP SHOE PEG CORN
  • 1 CUP BLACK EYED PEAS
  • 1 AVOCADO CHOPPED
  • 2/3 CUP CILANTRO, CHOPPED
  • 2/3 CUP GREEN ONION, CHOPPED
  • 1 TOMATO DICED
  • 1/4 CUP OLIVE OIL
  • 1/4 CUP RED WINE VINEGAR
  • 2 GARLIC CLOVES, MINCED
  • 3/4 TEASPOON SALT
  • 1/8 TEASPOON PEPPER
  • 1 TEASPOON CUMIN
