English Currant Cookies

Ingredients

  • 1/2 c butter
  • 3/4 c icing sugar,sifted
  • 1 egg
  • 1 tsp grated lemon rind
  • 1/2 tsp vanilla
  • 1 1/2 c all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp freshly grated nutmeg
  • 1/3 c dried currants

Preparation

Step 1

In a bowl beat butter with sugar until fluffy
Beat in egg,lemon rind and vanilla
In a separate bowl combine flour,baking powder and nutmeg
Stir into butter mixture in 3 additions
Stir in currants
Gather into a ball
Flatten into a disc
Wrap in plastic wrap
Refrigerate for at least 1 hr or until chilled
Dough can be refrigerated for up to 3 days
On a lightly floured board,roll out the dough to 1/8 in thickness
Using 2 in cookie cutter,cut out shapes, rerolling scraps once
Place on an ungreased cookie sheet
Bake in the center of a 350 F oven for about 12 min or until light golden brown
Transfer to a rack to cool
Makes about 48 cookies
