Ingredients
- 2-3 boneless skinless chicken breast-defrosted
- 2 t vegetable oil
- 2 t italian seasoning
- 1 box of spaghetti (16oz) regular- not thin
- 2- 15 0z cans chicken broth
- 1-2 bunches fresh basil leaves
- 4 cloves garlic
- 1/2 C olive oil
- 3 plum tomatoes
- 1 loaf french baguette or italian bread
- fresh parmesan cheese wedge block
Details
Preparation
Step 1
Coat chicken with oil & italian seasoning.
Place in ziploc bag & flatten with meat tenderizer.
Cook on grill 3 mins on one side & 2 on the other side or until the internal temp reads 165 degrees.
Chop chicken.
Break spaghetti in half & put in deep covered baker.
Pour broth over spaghetti.
Cover & put in microwave for 16 minutes on high.
Stir at 8 mins.
Remove from microwave.
Prep garlic.
Add garlic & basil to food processor.
Add 1/2 C of olive oil.
Prepare tomatoes & add to processor.
Add salt.
Process until all is incorporated.
Add sauce & chicken to pasta & mix.
Grate 1/2 C parmesan cheese.
Sprinkle on top.
Serve with bread.
