3 Bean 2 Nut Salad

My family enjoys this Italian style protein-packed salad all year round, but especially during the hot Texas summers. We now call it 3-2-1 Salad, 3 Bean, 2 Nut, 1 Great Salad!

Ingredients
- 1 (15 oz.) can red beans, drained & rinsed
- 1 (15 oz.) can white beans (garbanzo or cannelini), drained and rinsed
- 1/2 lb. fresh cooked green beans, cut into 1 inch pieces
- 2 green onions, sliced
- 1 small or half of a large red bell pepper, chopped
- 1/2 cup shredded carrots
- 2 tablespoons (about 8 pieces) sundried tomatoes, hydrated and chopped
- 1/3 cup sliced almonds, toasted
- 1/3 cup chopped walnuts, toasted
- juice of 1 lemon (1-2 tablespoons)
- 3 T. Italian style salad dressing
- 2 T. chopped fresh parsley
- salt and pepper to taste

Step 1
