Biscuit-Topped Hamburger Stew

Ingredients

  • 1 lb. lean ground beef
  • 1 med. onion, coarsely chopped
  • 1 can (14 1/2 oz.) diced tomatoes, undrained
  • 1 jar (12 oz.) home-style beef gravy
  • 1 1/2 c. diced peeled potatoes
  • 1 c. julienne carrots
  • 1 c. frozen cut green beans
  • 1/4 tsp. pepper
  • 1/2 can (12 oz.) refrigerated buttermilk biscuits

Preparation

Step 1

Heat oven to 375°. Spray 10-inch skillet with cooking spray. Heat over medium-high heat until hot. Add beef and onion; cook 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
2. Add remaining ingredients except biscuits; mix well. Heat to boiling. Reduce heat to medium-low. Cover; cook 10 to 15 minutes, stirring occasionally, until vegetables are ten der.
3. Spoon beef mixture into ungreased 8-inch square glass baking dish. Separate dough into 5 biscuits, cut each in half. Arrange biscuit pieces cut side down, around outside edges of hot mixture.
4. Bake about 20 minutes or until casserole is bubbly and biscuits are deep golden brown.
