Ingredients
- 2 tbsp olive oil
- 1 1/2 cup chopped onion
- 1 1/2 ground beef, crumbled
- 2 cloves garlic, minced
- 1/2 pd mushrooms, sliced
- 2 pd fresh spinach, coarsely chopped
- Salt and freshly ground black pepper, to taste
- Nutmeg, freshly grated
- 5 lg eggs, lightly beaten
- Freshly grated parmesan cheese
Preparation
Step 1
Saute the onion in olive oil over high heat, cook until soft, but not browned, about 5 minutes. Add the ground beef, garlic and mushrooms. Saute until meat is crumbled and lightly browned, just past pink, about 10 minutes. Add the spinach and cook for 5 minutes, stirring constantly. Add all seasoning, oregano, salt, pepper, and nutmeg to taste. Reduce heat to low, add the eggs, cook and stir until eggs are just set, but still soft. Do not overcook.
Serve immediately, passing the parmesan for topping as desired.
