Honey-Glazed Baby Carrots

Ingredients

  • 1 1/4 pounds baby carrots, trimmed and peeled
  • 1 tablespoon unsalted butter
  • 1 1/2 tablespoons honey
  • 1 tablespoon fresh lemon juice

  • 1 pound baby carrots
  • 2 tbs. unsalted butter
  • 2 tbs. brown sugar
  • 1/3 cup freshly squeezed orange juice
  • 1 tbs. grated peeled fresh ginger
  • Coarse sea salt
  • Freshly grated white pepper
  • 1 tsp. freshly squeezed lemon juice
  • Chopped fresh parsley or mint for garnish

Preparation

Step 1

In a steamer set over boiling water steam the carrots for 4 to 8 minutes, or until they are just tender, and transfer them to a bowl. In a skillet melt the butter with the honey and the lemon juice, stirring until the mixture is smooth, and add the carrots. Cook the mixture over moderately low heat, stirring, for 1 to 2 minutes, or until the carrots are glazed evenly and heated through, and season it with salt and pepper.

OJ & Ginger
In a small saucepan combine all ingredients except lemon juice and parsley. Bring to boil over medium heat, then cover and reduce the heat so the carrots simmer for 12 to 15 minutes until tender but not overcooked. Add the lemon juice and combine. Garnish with parsley or mint.
