Homemade Chorizo

Make ahead and freeze in ready to use portions.

Ingredients

  • 2.5 lbs ground pork
  • 1 tablespoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 2 tablespoon granulated garlic
  • 1 teaspoon ground black pepper
  • 4 tablespoons ancho chili powder
  • 6 tablespoon apple cider vinegar
  • Pinch of cloves or allspice

Preparation

Step 1

Put all ingredients in large bowl. Wearing gloves, gently mix, working spices into the meat. Do not overwork. Portion meat into 1/2 lb servings. Let mix sit in refrigerator overnight for flavors to blend. Freeze portions.
