Berry Clafoutis

A clafoutis is a warm, thick dessert with fresh fruit and a dusting of powdered sugar. This French dessert is traditionally made with cherries, but other fruits work just as well.

  • 1 teaspoon butter
  • 1 tablespoon granulated sugar
  • 10 ounces mixed berries (raspberries, blueberries or blackberries work well)
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1 cup minus 2 tablespoons powdered sugar, plus more for dusting
  • 3 large eggs
  • 1 cup half-and-half
  • 1 1/2 teaspoons vanilla extract

Directions:

Preheat the oven to 375 F.

Grease the bottom and sides of the cake pan with butter. Dust with the granulated sugar and fill the pan with the mixed berries.

In a small bowl, whisk together the eggs, half-and-half and vanilla extract.

Make a well in the dry ingredients and pour in the egg mixture. Stir until a smooth batter forms.

Pour the batter over the berries. They will rise toward the top during baking. Bake 30 – 35 minutes or until puffed up, golden and set in the middle. Do not open the oven until the end of the baking time, or the clafoutis may collapse.
