- 1 1/2 cups all-purpose flour
- 3/4 teaspoon salt
- 3 large eggs, at room temperature
- 1 1/2 cups whole milk, at room temperature
- 1 tablespoon fresh chives, minced
- 1 cup sharp cheddar, finely grated

One weekend recently, when I actually was home, I made these seriously freaking delicious Cheddar Chive Popovers for breakfast. The recipe comes from one of my newest cookbook additions Pancakes:
I had the hardest time choosing what to make first. So luckily my
you’ll know exactly what I’m talking about. Omg they are fun. You should make them. And if you’re a pancake lover like myself, you’re going to need this
Preheat the oven to 350°F. Generously coat a muffin pan with the vegetable oil or spray and set aside.
In a medium bowl, combine the flour and salt. In a measuring cup, measure out milk, add the eggs, and beat until combined.
Pour the wet ingredients into the dry ingredients and mix until nearly smooth. The batter will be thin with a few lumps. Fold in ½ cup of the cheddar cheese and the chives. If you’d like, you can transfer the batter to a large measuring cup or bowl with a spout; this will make it easier to pour the batter into the muffin wells.
Preheat the muffin pan in the oven for 2 to 3 minutes. Remove the hot pan and carefully pour the batter into each well, filling them a little more than halfway. Top with the remaining ½ cup cheddar cheese. Bake for 30 to 35 minutes until tall, puffed, and golden brown.
Buckwheat pancakes!
Fresh blueberry buttermilk pancakes with homemade maple syrup. I also like to make plain buttermilk pancakes, zest them with some orange peeling, and sprinkle some powdered sugar on top. Oh and drizzled lightly with syrup.

I love all pancakes, but I have to admit the fluffy buttermilk ones are always my favorites!

I love Buttermilk Pancakes with warm syrup poured all over the top! YUM!!!!
Gotta go with Blueberry! The addition of fruit negates the high calories & unhealthy properties!! (or so I tell myself)
