Ingredients

  • 8 ounces dried pasta
  • 8 strips of bacon, chopped
  • 2 eggs, lightly beaten
  • 3/4 cup grated Parmesan Cheese (plus more for sprinkling)
  • salt, to taste
  • lots of freshly ground black pepper
  • 1/4 cup chopped fresh parsley

Step 1

1. Cook the pasta according to the package directions, reserving 1 cup of pasta water when you drain the pasta.
2. While the pasta is cooking, cook the bacon in a large skillet until almost crispy. Drain off all but 2 tablespoons of bacon grease.
3. Add the hot pasta to the skillet with the bacon and stir in the beaten eggs and Parmesan cheese, thinning with pasta water if necessary. Season well with salt and pepper and add the fresh parsley.
4. Serve up and enjoy with a little more Parmesan cheese on top.
