Beef Tenderloin Roast

  • Center Cut Beef Tenderloin
  • Salt
  • Pepper
  • Butter

Preparation

Step 1

Using a center cut tenderloin roast, truss from center out to make meat even. Cover with 2 teaspoons salt and allow to sit, covered with plastic wrap, on counter at room temperature for 1 hour. After an hour, pat roast dry and season with pepper. Rub roast with 2 tablespoons softened butter. Place on pan with rack into a 350 preheated oven for 45-50 minutes until roast reaches an internal temp of 125.
While roast is in oven, prepare compound butter for serving. Mix 4 tablespoons softened butter, ½ minced shallot, 1 minced garlic clove, 1 tablespoon parsley and ¼ teaspoon each of salt & pepper. Stir to combine and place into refrigerator.
Heat 1 tablespoon oil in skillet. Sear roast for a couple of minutes on each side, about 8 minutes total to form a nice crust. Remove from skillet and top with 2 tablespoons compound butter. Spread to coat top of roast. Cover with foil and allow to rest 15 minutes.
Remove strings, slice and top with remaining compound butter.
