Fresh Ricotta Pasta Dish

Ingredients
- 16 ounces dried pasta
- 1 cup ricotta cheese
- 1 cup fresh torn herbs, such as a mix of basil leaves, fennel fronds, parsley and arugula
- 1 teaspoon fresh lemon juice
- Salt, to taste
- 1/4 cup reserved hot pasta water

Preparation
Step 1
Cook pasta according to package directions. Meanwhile, combine ricotta cheese, freshly torn herbs and lemon juice in a large mixing bowl. Salt to taste. When done, drain pasta and combine with ricotta cheese sauce and reserved hot pasta water. Serve immediately.
Makes 4 servings.
