Ingredients

  • 16

    ounces dried pasta

  • 1

    cup ricotta cheese

  • 1

    cup fresh torn herbs, such as a mix of basil leaves, fennel fronds, parsley and arugula

  • 1

    teaspoon fresh lemon juice

  • Salt, to taste

  • ¼

    cup reserved hot pasta water

Directions

Cook pasta according to package directions. Meanwhile, combine ricotta cheese, freshly torn herbs and lemon juice in a large mixing bowl. Salt to taste. When done, drain pasta and combine with ricotta cheese sauce and reserved hot pasta water. Serve immediately. Makes 4 servings.
