  • 1 cup dry spaetzle
  • ADD:
  • 1 1⁄2 cups asparagus tips
  • STIR IN:
  • 1 ⁄2 cup shredded Gruyère
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. stone-ground or whole-grain mustard
  • Salt and black pepper to taste

Preparation

Step 1

Prepare spaetzle in a pot of boiling salted water according to package directions.

Add asparagus in the final 3 minutes of boiling the spaetzle. Drain well; transfer spaetzle and asparagus to a bowl.

Stir in Gruyère, lemon juice, and mustard; season with salt and pepper.
