Spaetzle [SHPEHT-sluh] — which means "little sparrow" in German — is essentially tiny egg noodles or dumplings. It's sold alongside dry pasta and rice.

Ingredients
- PREPARE:
- 1 cup dry spaetzle
- ADD:
- 1 1⁄2 cups asparagus tips
- STIR IN:
- 1 ⁄2 cup shredded Gruyère
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. stone-ground or whole-grain mustard
- Salt and black pepper to taste

Preparation
Step 1
Prepare spaetzle in a pot of boiling salted water according to package directions.
Add asparagus in the final 3 minutes of boiling the spaetzle. Drain well; transfer spaetzle and asparagus to a bowl.
Stir in Gruyère, lemon juice, and mustard; season with salt and pepper.
