Mamalene's Coffee Can Pumpkin Bread

Ingredients

  • 1 1/2 cups sugar
  • 1 1/2 cups brown sugar
  • 4 eggs
  • 1 cup vegetable oil
  • 4 tsp cinnamon
  • 2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/2 tsp cloves
  • 2 tsp soda
  • 1 1/2 tsp salt
  • 1/2 tsp mace
  • 1 cup chopped pecans
  • 2 cups pumpkin
  • 2/3 cup water
  • 3 1/2 cups flour
  • 4 tin coffee cans, label removed (Walmart sells very cheap coffee in tin cans, empty)
  • Crisco
  • Flour
  • 1 cup mini chocolate chips (optional)

Preparation

Step 1

Remove coffee from tin cans. Wash, grease inside with Crisco, and flour (removing excess flour).

Beat together: Sugar, brown sugar, eggs, and vegetable oil.

Add in: Cinnamon, nutmeg, ginger, cloves, soda, salt, mace, pecans, pumpkin, and chocolate chips (optional).

Add in alternately: Water and 3 1/2 cups flour.

Pour mix evenly across 4 coffee cans. Place coffee cans (lid off) in oven and bake at 350 degrees for 1-1.5 hours, or until done. Cooking in coffee cans takes longer than cooking in loaf pans, so you will need to check with a toothpick beginning after 1 hour. Cool.

Once cooled, lids can be placed back on the cans.

Serving is easy - just slide the desired amount out of the can and slice.
