Lemon Pepper Chicken w/Romaine and Parmesan

Ingredients

  • Dressing
  • 3/4 cup light EVOO
  • 1/4 cup red wine vinegar
  • 4 tsp minced garlic
  • 1 T. fresh lemon juice
  • 1 T. Dijon mustard
  • 1 tsp pepper
  • Salad
  • 1 cup fresh shredded parmesan
  • 1 head romaine lettuce
  • cherry tomatoes
  • cucumber
  • croutons (optional)
  • Chicken
  • Prepare a day ahead and refrigerate
  • pound 4-5 chicken breasts flat
  • season with olive oil and lemon pepper seasoning

Preparation

Step 1

Mix dressing together a day ahead and refrigerate.

Broil the chicken for 3-5 minutes on each side and refrigerate overnight.

Slice or dice chicken into small bite sized pieces. Toss salad ingredients, chicken and dressing. Top with fresh parmesan cheese and croutons. Enjoy
