Lemon Pepper Chicken w/Romaine and Parmesan

Ingredients
- Dressing
- 3/4 cup light EVOO
- 1/4 cup red wine vinegar
- 4 tsp minced garlic
- 1 T. fresh lemon juice
- 1 T. Dijon mustard
- 1 tsp pepper
- Salad
- 1 cup fresh shredded parmesan
- 1 head romaine lettuce
- cherry tomatoes
- cucumber
- croutons (optional)
- Chicken
- Prepare a day ahead and refrigerate
- pound 4-5 chicken breasts flat
- season with olive oil and lemon pepper seasoning

Step 1
Mix dressing together a day ahead and refrigerate.
Broil the chicken for 3-5 minutes on each side and refrigerate overnight.
Slice or dice chicken into small bite sized pieces. Toss salad ingredients, chicken and dressing. Top with fresh parmesan cheese and croutons. Enjoy
