Fish Chowder for 2

MY NOTES: This would be good made a day ahead and refrigerated to give the flavors time to meld. And maybe add a few crushed Saltines to thicken up the broth?

Ingredients
- 1 cup water
- 1 cup diced potatoes
- 3 slices bacon
- 1 medium onion
- 3/4 lb fish fillets
- 1/8 teaspoon thyme
- 1 cup half & half
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 Tablespoons fresh parsley
Preparation
Step 1
Bring water to a boil in a Dutch oven and add potatoes. Cover and cook 10 minutes. Fry bacon until transparent; add pnions and cook until onion is soft and bacon is lightly browned.
Add bacon, onion, bacon drippings, fish fillets and thyme to potatoes and water. Simmer 10 minutes or until potatoes are tender.
Stir in half & half and salt and pepper . Simmer 5 minutes. Serve in bowls and sprinkle with parsley.
