Ingredients

  • 2 lbs meaty chicken pieces (breasts, thighs, or drumsticks)
  • 2 cups corn bread stuffing mix
  • 1 egg
  • 2 tbsp milk
  • 2 tbsp honey (optional)
  • 2 tbsp butter

Preparation

Step 1

Preheat oven to 375 degrees. Remove skin from chicken and discard. Rinse chicken under cold water, pat dry with paper towels. Set aside.

Place stuffing mix in a gallon size ziploc bag and use rolling pin to crush into fine pieces. Place stuffing crumbs in a pie plate.

Beat egg in a small bowl, add milk and stir in honey. Dip chicken pieces into egg mixture, then roll in stuffing crumbs.

Place chicken pieces meaty side up in baking dish, drizzle melted butter over the chicken. Bake for 45 minutes or until done.
