Ingredients

  • 2 chicken breasts -- cooked, cubed, chilled (or store-bought roasted chicken, shredded --discard skin and bones)
  • 2 stalks celery cut into 1/2" pieces
  • 1 large apple, cubed
  • 25 seedless grapes, halved
  • 1/2 c. dried cranberries -- optional
  • 1 can mandarin oranges, drained -- opt.
  • 1/2 tsp salt
  • 1/4 tsp. pepper
  • 1/2 c. light mayonnaise

Preparation

Step 1

In a bowl, stir everything together.

Serve on a bed of lettuce or as sandwiches on honey wheat bread.

Tip: Leave apple skin on for color.
