chicken breasts -- cooked, cubed, chilled (or store-bought roasted chicken, shredded --discard skin and bones)
stalks celery cut into ½" pieces
large apple, cubed
seedless grapes, halved
c. dried cranberries -- optional
can mandarin oranges, drained -- opt.
c. light mayonnaise
In a bowl, stir everything together. Serve on a bed of lettuce or as sandwiches on honey wheat bread. Tip: Leave apple skin on for color.
