Ingredients

  • Add 1/4 cup dry quinoa and 1/2 teaspoon curry powder to 1/2 cup boiling water.

Cover and simmer for 15 minutes.

Mix with 1/2 cup shredded carrots, 2 tablespoons dried cranberries, 3 chopped scallions, and 1 cup chickpeas.
