Koulourakia (almond biscuits)

Ingredients

  • 12 oz butter
  • 1 c sugar
  • 1/2 c warm water
  • Pinch of salt
  • 1 Tbsp brandy (more if desired)
  • 1 tsp baking soda
  • 1/2 tsp vanilla
  • Flour (see instructions)

Preparation

Step 1

Cream the butter and the sugar together for 5 min.
Dissolve the baking soda in the warm water
Beat into the creamed utter and sugar with the brandy,vanilla and a pinch of salt
Sieve and mix as much flour as the mixture will take to make a dough firm enough to handle
Tear off pieces of the dough and roll between the hands on a pastry board to form thin rolls about 9" long
Turn both ends back on each other to make 3 thicknesses and pinch together before placing on a greased baking sheet
Brush each one with a little beaten egg and bake in a moderate oven (325) for 15 mi n
