Cajun Chicken Fettuccine Alfredo

Ingredients

  • 1 package fettuccine pasta
  • 1 red bell pepper
  • 1 green bell pepper
  • chicken breasts
  • 1 tsp minced garlic
  • 1/2 cup butter
  • 1 quart heavy cream
  • 2/3 cup Parmesan cheese
  • 1/2 tsp Cajun seasoning

Step 1

Chicken breasts (enough to cut up and toss in) Cover in cajun seasoning and pan fry to brown. 3-4 mins each side. Place in oven 350 degrees for about 10 mins to finish cooking.

Start water for pasta and cook according to package directions. Drain and return to pan, lightly coat with olive oil to prevent sticking.

Add butter and garlic to pan used to cook chicken. Saute garlic until you can really smell it, then add the heavy cream. Hard simmer for 20-30 mins until desired consistency. Add Parmesan cheese, and 1/2 tsp Cajun seasoning more or less for desired taste. Cook until cheese is melted.

Cut chicken up and slice bell peppers. Toss into the sauce and cook until heated. Pour sauce over pasta and serve.
