Ingredients

  • 18

    eggs

  • 3

    cups sugar

  • 1

    qt milk

  • ½

    pint light cream

  • 2

    lbs. ricotta cheese

  • 1

    lb rice

  • juice of whole lemon

  • 2

    tsp vanilla

  • 1

    large can crushed pineapple

Directions

Mix all ingredients together with electric mixer, pour into pie shell or pan and bake at 350 until firm and golden brown on top. This makes for 9 inch pies or large pan that measures 15x 10x 2 1/2. I use River brand rice or Arborio rice. Also, cook rice aldente and I finish off its cooking with milk.
