Rice Pie

Ingredients
- 18 eggs
- 3 cups sugar
- 1 qt milk
- 1/2 pint light cream
- 2 lbs. ricotta cheese
- 1 lb rice
- juice of whole lemon
- 2 tsp vanilla
- 1 large can crushed pineapple

Preparation
Step 1
Mix all ingredients together with electric mixer, pour into pie shell or pan and bake at 350 until firm and golden brown on top.
This makes for 9 inch pies or large pan that measures 15x 10x 2 1/2.
I use River brand rice or Arborio rice. Also, cook rice aldente and I finish off its cooking with milk.
