Ingredients
- 2 tbsp olive oil
- 1 tbsp butter
- 1 lg clove garlic, minced
- 1/2 cup onion, finely chopped
- 1 1/2 roasted chicken (Chicken should be skinned, boned, and cut into small bite-sized pcs)
- 6 fresh corn tortillas (6" round)
- 9 lg eggs
- 1/4 cup half-and-half
- 3 tbsp Ortega chopped green chilies
- 1/4 tsp salt-adjust to taste
- Freshly ground black pepper, to taste
- 1 can (15 oz) refried Beans
- 1/4 Mexican cheese, shredded
- 2 lg firm-ripe avocados, sliced into 1/4" wedges
- 1 or 2 lg tomatoes, trimmed and diced
- 1 med white onion, finely diced
- Shredded lettuce
- 1 pt sour cream
- 1 bottle salsa

PREPARE INGREDIENTS:
Slice tomatoes and avocado, shred lettuce, chop onions-place in serving bowls, cover with slightly damp paper towels. Dish up sour cream and salsa in small bowls;p and keep everything in the refrigerator until ready to serve. Saute the onions and garlic in oil until soft, add chicken and cook until warmed through and slightly browned, keep warm. Place refried beans in glass bowl and put in microwave-ready to heat. Set out 2 lg baking sheets.
COOK TORTILLAS:
Heat 1" safflower oil in small frying pan to 365 degree F. Fry one tortilla at a time, using tongs to turn frequently or to hold under until it crisps, puffs slightly and browns lightly; about 2 minutes or less-do not overcook. Drain on paper towels.
PREPARE THE EGGS:
Beat eggs with chilies, salt, pepper and half-and-half. Melt butter in frying pan over medium heat, pour in egg mixture and scramble until softly cooked. (Eggs should still be moist).
ASSEMBLE THE TOSTADAS:
Turn on the broiler. Heat the refried beans in microwave until warm through. Arrange warm, fried tortillas on two large baking sheets, three on a sheet. Spread a thin layer of scrambled egg mixture and top with cheese. Set under broiler to melt cheese, 1 or 2 minutes. Garnish each tostada with 2 or 3 avocado slices.
Serve immediately with side dishes of shredded lettuce, diced tomatoes, chopped onions, sour cream and salsa.
