Orange Ale Vinaigrette & Arugula Salad

Ingredients

• 1 orange
• 1 small shallot, chopped
• 1 tsp. Dijon mustard
• 1 tsp. honey
• 1 Tbsp. orange juice
• 1/3 cup India Pale Ale Beer
• 1/3 cup olive oil
• salt & pepper
• 7 oz. arugula
• 1/2 cup feta cheese crumbles

Preparation

Step 1

Dressing;

Zest orange & add to a small bowl
Add shallot, mustard, honey & orange juice
Mix together
Add beer & while whisking, add olive oil until combined
Season with salt & pepper

Cut orange segments into small pieces

Salad:

Toss arugula with dressing & sprinkle with orange segments & feta cheese
